I just had to share this gorgeous Pinterest recipe that I found (and tried) last night. It was absolutely divine and I will be having it again this week- it was that good!

It’s from blog Season and suppers, I don’t own the recipe or image- just couldn’t resist sharing this recipe as it tastes so fab.

4 chicken thighs and 4 legs (bone in/skin on)
Chicken Marinade:
1/3 cup Dijon mustard
1/4 tsp. sweet or smoked paprika
1/4 tsp. sea salt
Freshly ground pepper
1/2 cup diced pancetta or bacon
1/2 cup diced onion
1 tsp. fresh thyme leaves or 1/2 tsp. dried
3/4 cup white wine
2 Tbsp. grainy mustard
2-3 Tbsp. creme fraiche or heavy cream
Fresh thyme, for garnish

A little bit of inspiration goes a long way. What could you achieve if you opened up your mind to the possibilities that the world has to offer? Small things, big things; it doesn’t matter what it is. Set your mind free from the weight of what ifs and buts and do something today.

Clear your mind

Take time out of your day to do something that makes you happy and calm, whether it’s listening to some music, meditating, reading a book or just switching off from everything. Sometimes just unplugging the phone, turning off your computer and being technology free, even for a short while- gives you the space to really be in the moment. You’ll find that taking away distractions will not only improve your mood, your relationships but also your mind set.

I think that it’s easy to get wrapped up in worries, stresses and everything around us that we forget to enjoy what’s happening right now. This is the life that we’re creating; memories that we’ll look back on and moments that we won’t ever get back.

Allow yourself to just be, with a clear mind- no guilt, no stress, no worries. See what a positive effect it has on your day. x



Small steps, every day

If you feel like you’re struggling with anything at the moment, try to remember that even the smallest step is a step in the right direction and be proud of every thing that you achieve. 

I’m working on focusing on positive things and trying to wake up each day starting with a good mindset. Some days are easier than others, and I find lots of things around me to inspire and motivate my day. At other times I struggle to find anything to feel positive about when I’m feeling tired and run down from health problems and trying to stay upbeat.

 I’ve learned though that even on your worst days, there is always something you can find to smile about. Everyone is going through something, and all in very different ways but as long as you keep going and find some joy in any part of your day then you’re winning.
